[Q] formatting and wiping problem

i have sgs gt i9003 with gingerbread 2.3.6 xxkpq firmware.
all the files and third party apps installed are not deleted or not uninstalled even after formatting (hard reset). i had allready tried hard reset through recovery mode and flashing and upgradation of firmware but that files and apps not deleted.
